Refreshing strawberry recipes

Who wouldn't love strawberries? Sweet red fruit that heralds sunny summer days. Prepare with us these 3 simple, yet excellent strawberry recipes that no palate can resist.

1. Unbaked strawberry CHEESECAKE

A fresh, simple and quick dessert that will impress at any summer party.

I N G R E D I E N T S :

CORPUS:

  • 200g of butter biscuits
  • 80g of butter
  • 1 tablespoon of maple syrup

KRÉM:

  • 500g of mascarpone
  • 250 ml whipping cream
  • 1 stabilizer
  • 200g white chocolate
  • 100g powdered sugar
  • 1 teaspoon vanilla extract (or 1 vanilla sugar)
  • 250g of fresh strawberries + a few strawberries for decoration


P R E P A R A T I O N :

  1.  Crush the cookies with a rolling pin or in a blender. Melt the butter. Then mix the crushed cookies in a bowl with melted butter and maple syrup. Line the bottom of the cake pan with the resulting mass and store in the refrigerator.

  2. Melt the white chocolate for the cream first so that it has time to cool down. While the chocolate is cooling, whip the whipped cream together with the stabilizer and put it in the refrigerator. Wash the strawberries and cut them into small pieces.

  3. Then mix mascarpone with powdered sugar and vanilla extract. While stirring constantly, gradually add the melted, cooled chocolate. Gently stir the whipped cream into the mixture and finally the sliced strawberries.

  4. Layer the cream on the body and decorate with strawberries. Put it down again to the refrigerator - for at least two hours. Then you can serve the solidified and cooled cheesecake :)



2. Light and tasty STRAWBERRY ICE CREAM

We probably can't even imagine summer without ice cream. Therefore, use sweet strawberries to prepare this proven recipe for simple homemade ice cream.

INGREDIENTS for 4 servings:

  • 200g of strawberries
  • 40g granulated sugar
  • 2 teaspoons of lemon juice
  • 250 ml of whipping cream
  • 1 stabilizer
  • 1 teaspoon of vanilla extract (or 1 vanilla sugar)
  • 60g Greek yogurt


P R E P A R A T I O N :

  1. Wash and clean the strawberries. Put a couple of them aside and break up the rest with a fork. Cut the reserved strawberries into smaller pieces.

  2. Pour the strawberry puree into a saucepan, add sugar, lemon juice and cook everything together approximately 5 minutes.

  3. Pour the sauce into a bowl and refrigerate until it cools down.

  4. Whip the cooled whipping cream together with the stabilizer and vanilla extract. Lightly mix the Greek yogurt into the whipped cream and finally chilled strawberry sauce and sliced strawberries.

  5. Pour the ice cream mixture into a resealable container, cover with cling film so that it touches the surface of the ice cream, and then seal.

  6. Put the prepared ice cream in the freezer for at least 6 hours (ideally overnight).

3. Homemade strawberry lemonade

To prepare honest homemade lemonade, first cook a delicious syrup with which you will be able to remember summer even during cold autumn days. Of course, if it lasts you until then :)

For the strawberry syrup we will need:

  • 500g of fresh strawberries
  • 250 ml of water
  • 1 organic lime (or lemon)
  • 200g of granulated sugar

 

P R E P A R A T I O N :

  1.  Wash, clean and cut the strawberries. Then put them in a pot and cover with water. Bring to a boil and cook on low heat for about 10 minutes, stirring constantly.

  2. Set aside and let cool. Then add sugar and lemon juice. Mix and store overnight in the refrigerator.

  3. The next day, strain this mixture through a sieve or cheesecloth.

  4. Bring the strawberry juice to a boil again. Then lower the temperature and cook for approximately 5 more minutes. Remove any foam during cooking.

  5. Pour the hot syrup into clean glass bottles, which then turn upside down or lay them down for about 20 minutes.

Preparation of lemonade:

The next procedure is already very simple. Pour ice into the jug, pour cooled strawberry syrup to taste and add a few fresh sliced strawberries (you can also add pieces of lime or mint). Finally, pour sparkling water and you can serve :)
